Ingredients (per single serving)
0.5 tsp cinnamon
0.5 tsp coconut oil
- Put banana, egg and cinnamon into a food processor and blend until smooth
- Gently heat coconut oil in a frying pan
- Add mixture and spread into corners of pan, fry on both sides for 2 minutes
- Continue until all mixture is used or put into an airtight container and use within 2 days
This produces a lovely light fluffy pancake with a really similar texture to American pancakes. I like to enjoy them with mixed berries, almond milk yoghurt and a drizzle of maple syrup!
